It’s common in foods such as bread, pasta, pizza and cereal. Gluten provides no essential nutrients. People with celiac disease have an immune reaction that is triggered by eating gluten. They develop inflammation and damage in their intestinal tracts and other parts of the body when they eat foods containing gluten
A study published in the journal JAMA suggests that eating higher-than-normal levels of gluten during the first five years of life can increase a childs likelihood of developing celiac disease.
Higher gluten intake was associated with a 6.1% increased risk of celiac disease autoimmunity, an immunological response to gluten, and a 7.2% increased risk of celiac disease per each additional gram of gluten per day, according to the study… (CNN, August 13, 2019)
